Scrambled Chicken Omelette

I wasn’t sure what to call this.

My meal plan requires me to make a chicken omelette with asparagus and broccoli. Well, despite my growing talent at omelette making, I still haven’t attained the “Omelette Chef Supreme” title yet – clearly I watch too much Toddlers and Tiaras – and haven’t yet devised a way to make sure 1/2 cup of egg whites is solid enough to hold the heaviness of the asparagus and broccoli.

So, I turned my chicken omelette into chicken scramble, and it’s delicious!!



  • 4oz pre-cooked chicken breast, or you can use 4oz pre-cooked lean ground chicken – I like to cook up the ground chicken with curry powder and cumin. As for the chicken breast, I bag my breasts with different spices and flavours then BBQ them – recipes coming soon…
  • 1/2 cup chopped asparagus
  • 1/2 cup chopped broccoli florets
  • 1/2 chopped jalepeno pepper
  • approx. 1 tbsp chopped red pepper
  • 1/2 cup liquid egg whites

You can use any seasoning you like. I used: 1 tsp red pepper flakes and 1 tsp garlic and herb seasoning


  1. Lightly oil a frying pan with macadamia nut or avocado oil, on a medium heat
  2. Put asparagus, broccoli, jalepeno and red pepper into pan, cover and cook until slightly softened    
  3. Uncover and add chicken and remaining ingredients. Continue cooking for a further few minutes until chicken is heated through.
  4. Add egg whites and let it sit in the pan for about a minute or two to cook. Once it all turns white, start to scramble. 
  5. Eat, or pack to take with you!

    • Sounds delicious! Unfortunately I can’t have sundries tomatoes 😦 too much sugar. But I’ll try that in my next off-season!
