I wasn’t the biggest fan of tilapia after a bad experience of it going off slightly, then re-heating it for lunch at the radio station I used to work for. The whole place smelled of fish. The WHOLE place. It was the talk of the station. It put me off tilapia for a long time.
After almost 2 years, I decided to give it another shot and concocted this easy to make recipe. I don’t know about you, but I’ve trawled and trawled (pun intended) recipe sites to find a good easy fish recipe and came up empty handed. So, I came up with my own.
Ingredients
- Tilapia filets (bought at Costco)
- 1 tbsp macadamia or coconut oil
- Chopped coriander, to taste
- Sea salt, to taste
- Garlic and herb seasoning, to taste
- Lemon pepper seasoning, to taste
- Cherry tomatoes, chopped
- Jalapeño, diced
- Green onion, diced
Steps
- Place tilapia filets on paper towel and dab off excess moisture
- Sprinkle one side of filets with lemon pepper, sea salt and garlic & herb seasoning
- Chop coriander, jalapeño and green onions
- Carefully place filets in heated frying pan, seasoned side down
- Season the other side while it’s in the pan
- Throw in coriander, jalapeño and green onions
- When filets start to turn white, carefully flip over and cook through the other side
- Serve immediately or store to eat later – but make sure you eat within a week, you don’t want to end up in the same situation I did (see above story)
